Stuffed Pepper Bell Soup


1 tbsp olive oil
1 lb ground beef
2 green peppers, medium, dice
1 red pepper, medium, dice
1 yellow pepper, medium, dice
1 onion, medium, dice
1 tbsp garlic, minced
1 28 oz. can tomato sauce
1 28 oz can diced tomatoes
1 qt. chicken stock
1/2 cup brown sugar
1 cup long grain rice or 1/3 cup orzo
Salt a pepper to taste


Heat oil in a stock pot and brown beef. Add onion and cook for 5 minutes, then add peppers and garlic and cook an additional 5 minutes, then add the remaining ingredients Save the rice (or orzo). Bring to a boil and simmer for 15 minutes. Add rice (or orzo) and cook for 15-20 minutes until rice (or orzo) is cooked through. Season with salt and pepper and serve hot.
