Winter Baked Potato Soup
"
A thick hearty soup for those winter days when only a soup will do. The mixture of the potatoes, onion, bacon and cheese add just the right touch to cold day."
Ingredients
2/3 cup butter
2/3 cup of flour
1 cup sour cream
7 cups milk
4 green onions sliced thin
1 & 1/4 cups of shredded Cheddar cheese,
4 LARGE baking potatoes baked, cooled and cubed salt & pepper to taste
12 strips of well cooked bacon, crumbled
Instructions
In a large Dutch Oven, melt the butter. Stir in the flour and whisk till light brown and smooth. Gradually, add the milk, whisking constantly till thickened. The soup base will thicken at its best when it comes to a soft boil. Once it is thickened, add the potatoes & onions whisking constantly. Bring to a slow rolling boil. Reduce heat and simmer for 10 minutes. Remove from heat and add the rest of the ingredients. Stir until the cheese is melted. Serve immediately with garlic/butter croutons
