Venison Chili
"
Great winter soup/chili. If you don't have venison can use ground beef, but it is not as tasty."
Ingredients
1# ground venison
2 T olive oil
1 vidalia or sweet onion minced
1 tsp. chili powder (or to taste)
1 tsp. crushed garlic
1 tsp. fresh ground black pepper
1 tsp. course ground sea salt
2 small cans (15 oz) red kidney beans or substitute hot chili beans
Instructions
Cook minced onion in oil until they are translucent. Add venison and cook until browned. Add rest of ingredients, simmer for two hours on low heat. Serve with dollop of sour cream or grated sharp cheese if desired. Recipe can be doubled.
