1 head of cauliflower separated into florets
1 large onion chopped
1/2 bunch of cilantro
1 large garlic clove minced
2 Tbs of coconut oil
4 cups of chicken stock or vegetable stock
salt and pepper to taste
1- 3 tsp curry powder to taste
1/4 cup heavy cream
In the food processor with metal blade, chop the cilantro and remove to a bowl
Then chop the onion and garlic and add to cilantro
Heat the coconut oil and saute the garlic and onion till softened. Stir in the cilantro and cook a minute or two.
Add the stock, the cauliflower, salt and pepper and curry powder to taste
Bring to a boil and cover and simmer till cauliflower is cooked about 20-30 minutes.
Use a hand blender to puree soup or use a blender to puree in batches.
Return soup to the pot and add the cream to finish the soup.
