Mia's Sweet Pea Soup
"
This is an alternative to split pea soup. I find it much sweeter and is very easy to prepare."
Ingredients
4 cups beef broth
1 large package frozen peas (20oz)
1 smoked ham bone with a good amount of excess ham.
2 bay leaves
1 tbs. dried thyme leaves
salt & pepper to taste.
Instructions
Add all ingredients to large soup pot.
Cover and bring to boil.
Cook approx 1 1/2 hours.
Remove ham bone and any excess ham.
Remove any remaining spices and discard.
After cooling about `1/2 hour, using Cuisinart hand wand, mix the peas and broth till combined.
"Pull" or cut excess ham and add back to pea mixture.
Serve with croutons.
Serves 8
