1/2 a red pepper - diced
1/2 a yellow pepper - diced
1/2 a green pepper - diced
1 medium onion - diced
2 cloves of garlic - minced
1 tsp. dried basil (or 3 leaves fresh)
1 tbsp. dried oregano
1 medium bay leaf
red pepper flakes - to taste
2 tbsp. olive oil
1 can of diced tomatoes
1/4 cup of water
6-9 slices of bacon - diced (uncooked)
1 package of penne pasta - or any other pasta your family enjoys.
Cook the pasta till 'al dente' as per the directions on the package. -This can be done in advance, simply rinse the pasta once its cooked, drain and set aside.
Coat the bottom of a deep saute pan with olive oil and place over medium heat.
Add onions, peppers and garlic and saute until slightly tender (about 3-4 minutes).
Add the can of diced tomatoes, the basil, oregano, bay leaf, red pepper flakes and diced bacon - stir to combine all ingredients. Cover and let simmer over low-med. heat for 10-12 minutes - stir occasionally.
Uncover and add the cooked pasta - mix together and simmer for 1-2 minutes or until the pasta is heated through and covered with sauce.
Serve with a side salad and some garlic bread.
