Chicken Curry Burrito with Banana

" Sweet, spicy, savory--what's not to like?"

Ingredients

1 lbs boneless/skinless chicken breasts or thighs cut to 1/2" strips
4 Tbs madras curry powder
juice of one lime or lemon or a splash of orange juice
8 large flour tortillas
peanut butter (crunchy preferred)
8 nice ripe bananas, cut lengthwise

Instructions

Combine chicken, curry powder and lime/lemon/organce juice, and let it marinade for at least an hour. Grill until done.

Spread peanut butter thinly on tortilla, divide chicken strips into 8 portions and place on tortilla and sliced banana. Roll like a burrito and toast on a griddle until toasty and crunchy. Serve with a nice iced lemonade.
