Broccoli and Kale Soup
8 cups broccoli
Bunch of kale
Whole onion chopped
3 cups water or vegetable broth
2 tablespoons olive oil (or butter)
Salt and pepper to taste
Saute the onion. When onion is translucent throw everything else in. Simmer until cooked (about 10 minutes). Blend using a hand blender or a regular blender. Can be served with a little heavy cream. Freezes well for future use.
