Spicy Black Bean Dip
1/4 of a med. white onion diced
1 can Rotel Hot Tomatoes
1 can Black Beans
1 Cup colby/jack cheese shredded
Choice of mexican style corn chips
In a large skillet, saute diced onions and rotel tomatoes on med heat, stir often and cook for 10 mins. In a food processor, cream the black beans for a few seconds, add to pan of onions and tomatoes, turn heat to low, stirring often and cook for 10 more mins. Stir in cheese until melted. Enjoy with chips!
