1 8-oz block cream cheese, softened
1/2 cup apricot preserves
1 tablespoon finely chopped chipotle pepper with adobo sauce
2 tablespoons water
1 green onion, white and some green, finely chopped.
Put the preserves, pepper and water in a small saucepan. Cook over low heat until preserves are melted and all ingredients are combined. Place block of softened cream cheese on small platter and pour preserves over the top. Sprinkle with chopped green onion. Serve with your favorite crackers.
