1 can re-fried beans
1 cup of mayonnaise
1 bag of taco seasoning
1 bag of shredded 4 cheese Mexican cheese (NOT taco cheese)
1 chopped tomato
You can then add any other toppings you may like such as olives or green scallions.
Spread the re-fried beans on the bottom of a glass pan. The larger the pan the thinner the layer. I change it up depending on how many people I need it to feed.
In a mixing bowl, mix the 1 cup of mayonnaise with the taco seasoning thoroughly. Spread mixture onto the re-fried bean layer to form a second layer.
Sprinkle cheese and chopped tomatoes and any other toppings of your choice in alternating layers on top. Bake in the oven at 350-400 until the cheese bubbles in the middle. Enjoy with tortilla chips or Triscuit crackers.
