3 cans Black Eyed Peas (drained & washed)
2 diced bell peppers
1 jar jalapeno peppers (to taste)
1 diced onion
1 jar pimento diced
1 bunch scallions, diced with tops
8 oz. Italian Dressing
Combine all ingredients and mix well. Pour 8 oz. Italian dressing over mixture; add salt & pepper to taste. Cover and chill at LEAST 48 hours. Serve with tortilla or tostada chips.
