Taco Soup
This is a perfect meal for any time of the year. It's filling and low-fat!

INGREDIENTS
1 can Black beans
1 can Kidney beans
2 cans Corn
1 can Garbanzo beans
2 cans Diced tomatoes with green chilies
1 can chopped Olives

Add ½ - ¾ pkg. of taco seasoning packet
1 clove garlic, pressed
About ¼ c. chopped cilantro
Squeeze 1 fresh lime
Salt to taste (approx. 1 tsp.)
Instructions
In large stew pot add the cans above. Let simmer
In frying pan cook approx. 1 lb of ground hamburger (or turkey burger for low-fat version) with ½ onion (I prefer to rinse off the meat after cooking). Add to stew pot and let simmer for at least 15 minutes.
Serve with any or all of the following: guacamole, sour cream, shredded cheese and tortilla chips
You can increase the cans to 2 for larger recipes and add more seasoning and meat.
