Celery Walnut Soup

Nice & Light


1 bunch of celery
1 large onion
Fat (Butter, Margarine, Bacon Drip or Sesame Oil)
4 cups stock (mushroom is nice)
1 cup cream
1 cup walnuts, toasted.


Caramelize the onion and celery in the fat. Add stock. Cover and simmer for at least a half hour, until the celery is very tender. Transfer to blender, and whiz until desired consistency, adding more stock if necessary. Now add the walnuts and whiz more. When you are ready to serve, add back to the pan with as much cream as you want, season to taste with salt/pepper, and warm it through.
Top with Parmesan cheese or yogurt though the cheese won't go well with Sesame Oil but a dollop of Soy Sauce would work well.
