Little Lentils

Lentil Stew/with escarole served in bread boule."


1 red onion
1 red pepper
2 stalks celery
1/2 bag lentils (rinsed)
1 sweet potato
Stock (any kind )large can
1 can rotel green chiles
1 28oz can Furmano's diced tomatoes w/ cilantro & lime
1 bunch escarole
whole nutmeg(grated)


First start heating a large heavy pot with olive oil on medium low. Saute the first 3 (chopped) ingredients about 5 min. then add chopped sweet potato. Next add every thing except the escarole & nutmeg. raise the med low temp. to med high (gentile boil) for 30 min. at the end drop in chopped escarole add grated nutmeg on top 1/2 teasp. serve in a bread boule sprinkle with cilantro...enjoy
