New England Clam Chowder

2 slices thick cut bacon diced
1 onion diced
1 clove garlic grated
1 cup water
1 cup diced potato
1/2 tsp salt
Pepper to taste
3 6.5 oz cans chopped clams
2 cups milk
2 tbs butter
Instructions
1) Put the bacon in a cold pan and heat it to medium, stirring occasionally until crisp.
2) Add the onion and garlic if you want the bacon soft in the end.
2a) Or remove the bacon and then add the onion and garlic. Cook until the onion is tender.
3) Add the water, potato, salt and pepper to the pan. Heat to boiling, reduce heat and simmering about 15 min or until potato is tender.
4) Add clams with liquid, milk and butter. Cook 3 min, simmer until ready to serve.
4a) Garnish with reserved bacon.
