Broccoli Soup


1 stick butter
1/2 c flour
1/2 medium onion, chopped
white pepper to taste
1 bunch broccoli
1 quart half in half
1 quart chicken broth


Heat half n half and chicken broth until warm, set aside.

Wash and chop the stems and florets of broccoli and steam approximately 5 minutes, place in food processor and chop until fine. Set aside.

In 4 quart stock pot melt butter, added onions and cook until tender. Stir in flour and white pepper, cooking and stirring 5 minutes.

Slowly stir in heated half n half and chicken broth, mixing well. Stir in chopped broccoli. Heat on low heat, stirring constantly until thickened to preference, Enjoy!
