Vegetable Barley Soup

A hearty soup using hamburger which shortens cooking time. I often double the recipe."


1 lb. ground beef
1 qt. tomatoes
2 cups water
1 cup onion, diced
1 cup sliced carrots
2 stalks celery, diced
1/3 cup pearl barley
1/4 cup ketchup
1 Tbls. beef bouillon, optional
2 tsp. seasoning blend/salt
1 tsp. dried crushed basil
1 bay leaf
Salt and pepper to taste


Brown ground beef, drain any fat. Transfer to soup kettle. Add water, undrained tomatoes, onion, celery, barley and seasonings except for basil. Bring to boil, then reduce heat to a gentle boil for 1 hr or till veggies tender. Add basil in last 15 minutes.
