Vegetable Beef Soup

A vegetable Beef soup that is hearty enough to serve as a main dish."

Ingredients

8 C. Water
1 large shank bone with a lot of meat attached
1 clove garlic,minced
1 onion, chopped
Carrots
Celery
Potatoes
Green Beans
1 large can of diced tomatoes
1 med. can of tomato juice
salt
pepper
celery salt


Instructions

Bring to boil 8 C. put in shank bone,garlic, and onion. Reduce heat and simmer for two hours. While it is cooking, cut all of the vegetables into bite size pieces. Add the rest of the ingredients. Put in the seasoning to taste. Cook until the vegetables are fork tender, about 1 hour on a low heat. Remove bone and meat. The meat should be falling off the bone. Cut the meat into bite size pieces and serve.
