Country Style Split Pea Soup

Ingredients
1 cup green or yellow split peas
1/2 cup chopped onion
1 to 2 cloves garlic, minced
1 tablespoon butter or oil
1 quart ham or chicken stock
1 bay leaf
dash pepper 1/4 cup diced celery
4 small carrots, peeled and sliced thin
2 medium potatoes, peeled and diced
1 cup diced cooked ham
Instructions
In a large saucepan or pot saute onion and garlic in butter or oil until tender, about 5 minutes. Add peas, stock, bay leaf and pepper. Heat to boiling. Reduce heat to simmer. cover and simmer until peas are tender, stirring occasionally, about 30 minutes. Add vegetables to soup. Cover and simmer until vegetables are just tender and still retain their shape and texture, about 10 to 15 minutes.
