Mary's Healthy Soup

Low Sodium / No Fat
A hearty soup that is a meal in itself. My husband and I use it as a way of eating healthy during the week and keeping our weight and health in check"


1 14 lbs roasted chicken boned and chunked
1 sweet onion chopped
1 red or yellow pepper chopped
3 large cloves garlic minced
1 15oz can low sodium roasted diced tomatoes
1 15oz can low sodium black beans drained and rinsed
1 6oz can mushrooms rinsed
1 tbls cumin
1/4 tsp cayenne pepper or more to taste
1 32oz bottle low sodium tomatoe or tomatoe vegetable juice
1/4 c parsley chopped
1/4 c cilantro chopped
1 tbls fresh lemon juice


Place garlic, half the onion and pepper in blender, chop. Place second half of onion and pepper and pulse to chop. Add 1/2 tomatoe juice and cumin and cayenne and simmer until veggies are softened.Add beans, roasted tomatoes and mushrooms the rest of the tomatoe juice. simmer 10 minutes then add parsley, cilantro and lemon juice. Heat thru and serve
