Cream of Carrot Soup

This is a wonderfully smooth and tasty soup."


1/4 cup butter
5 medium carrots,peeled &chopped
1 onion, finely chopped
1 tsp salt
4 cups chicken stock
1/2 cups rice
1 cup half/half
pepper to taste.
sour cream


Melt butter in large sauce pan. Add carrots, onion, & salt.
Cover and simmer 15 min,stirring occasionally.
Add Chicken stock and rice.
Cover & simmer 45 min or until carrots are tender. Blend in blender. Reheat & add half/half.
Serve with a large dollop of sour cream in the middle of the bowl.
