Easy Cheesy Potato Soup

Scalloped potatoes or au gratin


There are just two of us now in our household. One box of scalloped or au gratin potatoes makes too much for one meal. I use this leftover to make a quick soup.

I saute some onions, throw in the leftover potatoes, add milk, and simmer a while. There is already cheese in the potatoes so no need to add more. You can leave the potatoes chunky or puree, we prefer chunky.

This is quick and easy and delicious!
