Exquisite Mushroom Soup

Mushroom Soup"


3 carrots chopped
2 stalks celery chopped
1 fennel bulb chopped
4 TBSP butter
1 lb assorted mushrooms (crimini, shitake, portabello, oyster, etc)sliced with stems removed
1 C white wine
6 C chicken broth
1/4 C Madeira
6 TBSP brie cheese
dill for garnish


Saute carrots, celery and fennel in 2 TBSP butter for 8 minutes
add 1 C white wine and boil down until the wine has almost disappeared (2-3 TBSP remain)
in the meantime, saute the sliced mushrooms in 2 TBSP butter until liquid has rendered and almost disappeared
add Madeira and cook until Madeira has almost disappeared.
add chicken stock to vegetables and add half of the sauteed mushrooms -simmer for 15 minutes
puree soup in a Cuisinart or blender
return to pot and add sliced mushrooms
add salt and pepper to taste
just before serving add 1 TBSP of brie cheese to each soup bowl and garnish with a little chopped dill
