Turkey Soup

“
Great to make after Thanksgiving; I add rice, but you could add noodles as well. If you add more "chunky stuff" it can become a stoup."
Ingredients
Leftover Turkey Carcass
Water
1 onion, quartered
2 celery hearts
6 peppercorns
1 TSP salt
1 cup chopped celery
1 cup sliced carrots
3 TBSP butter
3 cups chopped turkey meat
1 cup rice, cooked
Instructions
BROTH
Cover carcass with water; add onion, celery hearts, peppercorns & salt. Simmer uncovered for 2 to 3 hours, cool slightly, add water to make 8 cups (I NEVER have to do this!) Strain broth, discard carcass & vegetables. Store in refrigerator for up to 5 days or freeze.
SOUP
Saute celery & carrots in butter until tender. Add to 8 cups broth with turkey, adjust seasoning, simmer soup for 15-25 minutes, add rice & serve.
When served on day 2, will be thicker as the rice absorbs more liquid.
