Chicken Tortilla SoupUser Submitted Recipe
1 TBSP butter
1/2 Medium onion
1 Jalepeno Pepper (Increase peppers if you like it hotter)
1 tsp Salt
1 TBSP Black Pepper
1 tsp Thyme
Small Can of Corn (approx 7 oz)
Small Can of Diced Tomatoes (approx 7oz)
3 Cans of Chicken Broth (14oz each)
2 cups of cooked / diced chicken
Garnish (optional items):
Shredded Cheddar cheese
Set Soup Maker to 5 minutes on high. Add Butter. Once butter begins to melt - add 1/2 Medium Onion and Jalepeno (remove seeds before cooking) cut into small pieces. Stir periodically.
Set Soup Maker to 15 minutes on high.
Add spices, Corn, Tomatoes & Chicken Broth and bring to a boil. Continue boiling until timer is complete.
Set Soup Maker to 30 minutes on medium.
Add Chicken and cook for 30 minutes. Check corn - when corn is at the desired consistency, the soup is ready.
Garnish with tortilla chips, cheese or Cilantro if desired. Enjoy
