Black Bean


with Smoked Turkey
A delicious and healthy soup with turkey rather than traditional pork"

Ingredients

1 lb bag dried black beans
1 15 oz can chicken broth
2 smoked turkey drumsticks
2 stalks celery
2 carrots
2 small onions
1 15 oz can diced tomatoes
3 Tb olive oil
1 teaspoon oregano
1 bay leaf
2 - hot dried chiles
salt
pepper


Instructions

soak beans overnight in cool water
dice onions, celery, and carrot and saute with olive oil in large stock pot (12 qt)
add beans and half of soaking water (avoid any settlement)
add turkey parts
after comes to boil, remove any protein that surfaces
add tomatoes, and remaining ingredients
add 3 qts water
simmer for 4 hours
discard bay leaf and hot peppers
remove turkey parts and let cool slightly
Puree partially (leave some beans whole) can use immersion blender, blender, or food processor
shred turkey from bones and add back to soup.

Can be served with a dollop of sour cream, chopped onion, chopped egg, or plain.
