Carrot Ginger Soup


2 lbs. carrots- peeled & sliced
tbsp. grated ginger
1 chopped white onion
8 cups vegetable broth
1 white potato, peeled & diced
2 tbsp. olive oil


Heat olive oil in bottom of soup pot, add onion & ginger just until translucent, add diced potatoes and carrots cook for one more minute. Add vegetable broth and simmer until carrots are done. Take batches of soup out and blend until smooth add all smooth batches together and serve. Can add cilantro chopped on top as a garnish.
