Zuchini Soup


One Tablespoon butter
One Tablespoon oil
One small onion, chopped
Six cups medium zucchini, sliced
One sprig fresh herb (Basil, Tarragon, Cilantro, Thyme or Oregano) or 1/2 teaspoon dried
Garnish with Lemon wedges and yogurt


Heat butter and oil in medium size skillet
Add onion and saute until soft
Add remaining ingredients except for pepper and garnish, simmer for ten minutes, stir occasionally.
Transfer to blender and puree
Season with white pepper to taste
Reheat or chill
Garnish with lemon wedges and a dollop of yogurt
Add 1/2 teaspoon white pepper to taste
