White Chicken Chili
INGREDIENTS
28oz can of White Hominy, drained & rinsed
2 15oz can Great Northern Beans or Cannelli Beans, drained & rinsed
2 containers of Chicken Broth or Chicken Stock
1 onion, diced
1 jalapeno, seeded & chopped
1 small can diced green chilies
3 garlic cloves, finely chopped
2 teaspoons ground Cumin + cumin to sprinkle on chicken
2 Tablespoons vegetable oil
1 pkg of Chicken Tenders or 3 Chicken Breasts
2 limes, juice only
2 tablespoons of cilantro
Salt & pepper
Instructions
In a large skillet:
Sautee the onion, garlic & jalapeno until soft
(We puree the onion, garlic, jalapeno & green chilies to cut this step out)
In a large pot combine:
28oz can of White Hominy, drained & rinsed
2 15oz can Great Northern Beans or Cannelli Beans, drained & rinsed
2 containers of Chicken Broth or Chicken Stock
Sauteed or pureed onion, garlic & jalapeno
1 small can diced green chilies
2 teaspoons ground Cumin
Simmer on medium low heat for at least 2 hours to allow flavors to combine keep heat low enough that it doesn’t boil.

In a large skillet:
2 Tablespoons vegetable oil
1 pkg of Chicken Tenders or 3 Chicken Breasts
Sprinkle chicken with salt, pepper & cumin, brown and then put whole pieces in the broth mixture for an hour.
Pull the chicken from the broth mixture & shred it and put back in broth mixture.
Before you serve add juice of 2 limes & 2 tablespoons of cilantro.

I serve mine garnished with avocado slices & garlic bread on the side.
