Tomato Soup


Vegetarian Tomato Soup

Ingredients

Tomato (2 lbs – big)
Onion(1 small)
Potato (1 small)
Ginger (5gms, a very small piece)
Carrot (1)
Black Pepper (6-7 whole)
Salt (To taste)
Sugar (To taste)
Butter (Unsalted, 5-6 tbsp)
Water (2.5 cups)


Instructions

Cut tomatoes into quarters, cut onion, potatoes and caroots into 1 inch pieces.

Add 3 tbsp butter in a pressure cooker and heat. Once the butter has melted, add onion and sauté it till it gets little brown. Add cut ginger, potato and carrot and sauté it little more. Add whole black pepper and tomato and pressure cook on low for 5-6 mins after one whistle. Also put 1 cup of water.

Let it cool a bit and then make puree with cuisinart hand blender. Heat remaining butter in a pan and put the puree in it. Add water as per the consistency you desire. Add slat and sugar to taste and boil for 10 mins. You can add more butter on top of it while serving.
