Stuffed Pepper Soup

A robust and hearty soup that tasted just like Stuffed Peppers!"

Ingredients

2 cans Beef Broth
4 cups Water
2 packets low sodium Beef Bullion
1 cup Brown Rice
1 cup White Rice
2 cans Tomato Soup
2 small cans Tomato Sauce
1 lb. Turkey Bacon cut in 1 inch pieces
1 lb. Ground Turkey
1 lb. Ground Beef
2 tsp. Garlic Powder
2 tsp. Onion Powder
1/2 tsp. Turmeric
2 large Yellow Onions
2 tbsp. Butter
4 Green Bell Peppers 2 tbsp. Extra Virgin Olive Oil


Instructions

In a large soup pot, put in the Beef Broth, water, Beef Bullion packets and all the rice. Bring to a Boil and then lower heat and simmer for 30 minutes. Add the Tomato Soup and Tomato Sauce, stirring well. Stir and cook on low heat while preparing the other items to add to the soup pot. Fry up the Turkey Bacon, drain fat on paper towels and then add to soup. Chop onions in food processor and then saute them in butter until golden brown and then add to soup pot. Chop green peppers in food processor and then saute the Green Bell Peppers in Extra Virgin Olive Oil until starting to soften and then add to soup. Brown Ground Turkey seasoned with 1 tsp. each of Garlic and Onion Powder, drain fat and add to soup. Brown Ground Beef seasoned with Turmeric, 1 tsp. each of Garlic and Onion Powder, drain fat and add to soup. Stir well. Simmer for 2 hours over low heat, stirring occasionally.
