Seafood Bisque Topped with Lobster Meat

SEAFOOD BISQUE


LOW CARB/NO CARB
SOOO YUMMY"

Ingredients

1 cup chopped celery
1/2 cup chopped green onions
1/2 cup chopped onion
2 cups chicken bouillon (or equiv canned)
2 cups water
1 cup pureed roma tomatoes (or equiv canned tomato sauce)
Salt & pepper to taste
3-4 lg. garlic cloves (or about 2 tbls minced garlic)
1 tsp fresh or dried basil
Some old bay seasoning (to taste)
1 cup heavy cream
Seafood…. This is where you can get creative &/or add the seafood you like. You can add ad much or as little seafood you’d like to have in your bisque.
I used fresh crabmeat & tiny shrimps (about 1-2 cups of each)
You can add clams, lobster, whatever your heart desires. It’s all good!


Instructions

Chop veggies in your Cuisinart add to stock pot and sauté in a little olive oil. Puree tomatoes in Cuisinart and add to veggies.
Add broth and spices to taste.
Bring to a boil.
Add seafood and simmer on med heat for about 20 minutes.
Add cream and serve
You can serve with little fishy crackers for a cute touch!
