Slow Cooking Puerto Rican Beef Stew

Ingredients
2 lbs. of lean beef stew meat, cut into 1 inch sized cubes
1/2 cup of flour
2 tblspoons of oil
1/2 cup of finely chopped onion and green peppers
1 minced garlic clove and 3 tablespoons of finely chopped fresh cilantro
5 cups of water or low sodium beef brother
8 ounces of tomato sauce
1 teaspoon of hot sauce (choose to age group, when the children were young, I did not use the picante but mild instead)
1/2 teaspoon of each of salt, white or black pepper, garlic powder, onion powder and ground red pepper
2 medium white potatos, peeled and quartered
Instructions
Flour cubes of meat and brown in 1 tablespoon of oil. Remove from pan, add last of oil and saute on just under medium heat, the minced galic, onion, peppers and cilantro for 3 minutes, stirring so as not to burn. Add back the meat, water or beef broth, tomato sauce and hot sauce. Simmer for 20 minutes and skim off scum. Add the balance of spices and potatos. Cover and simmer on lowest heat for at least 40 minutes, or until the meat is tender and you cannot wait any longer because it just smells too good !!
