Cream of Mushroom Soup

Creamy winter soup."


3 pints button mushrooms, cleaned and quartered
1/4 cup butter
3 cloves Garlic minced
3 cups chicken broth
2 cups cream


Combine mushroosm, garlic and butter in Chef's Classic Stainless 5.5Qt Multi-Purpose Pot.
Cook covered for 15 minutes. Remove the lid and continue to cook until liquids evaporate and mushrooms start to caramelize.
Add chicken broth. Simmer for 10 minutes until mushrooms are tender. Using a SmartStick® Hand Blender, emulsify the mushrooms and chicken broth until the consistency you would like. Add the cream and heat through.
Serve with toasted Italian garlic bread.
