Cheese Burger Soup

Ingredients

1 tbs olive oil
1 medium onion
2 lbs ground beef (lean chuck)
1 cube butter
1/2 cup flour
1 tbs tomato paste
1 tbs mustard
1 tbs mayonase
1 tbs ketchup
1 tbs salt
1 ts pepper
1/4 ts pepper flakes
3 cloves garlic (crushed)
2 qt milk
2 cups grated cheddar cheese
5 roma tomatoes
1 head lettuce


Instructions

In 8 quart pot:
Sweat onion with olive oil
Add ground beef, salt, pepper, pepper flakes, garlic and tomato paste.

Prepare rue with butter and flour. Add rue and milk to browned beef mixture. Add mustard, mayonase and ketchup to soup and cook to simmer. Add cheddar cheese. Stir until cheese is fully melted and incorporated.

Cut tomatoes to 3/8" slices and add to soup.

Cut lettuce to small salad size pieces and before serving.
