Cold Cucumber Soup


Cool as a Cucumber to Beat the Summer Heat
Cold Cucumber Soup for Summer ease and comfort. Surprisingly filling and healthful soup."

Ingredients

1/2 large English Cucumber, washed with skin on
4-6 ice cubes
1/8 C Lime juice
1 clove garlic peeled
1 Tbsp. Chili paste
several stems watercress (washed & torn into pieces)
1 C Greek Yogurt
handful feta cheese crumbles (garnish)
1 tsp. sweet & sour sauce (garnish)


Instructions

Combine cucumber, lime juice, ice cubes, chili paste, garlic & watercress into Cuisinart food processor and puree until looks like green smoothie.

Add Greek yogurt and 1/2 to one full Avocado (peeled and pit removed)
Blend just until creamy.

Serve into chilled bowls, garnish with Feta cheese and lightly swirled sweet & sour sauce.

Recommended serve immediately.
Great with Crusty Bread and Summer Drink of choice
