Easy Mexican Fiesta SoupUser Submitted Recipe
1 lb boneless skinless chicken breast, boiled and shredded
1 pkg white chicken chili seasoning mix
2 14 oz cans chicken broth
1 cup water
1 can white beans, undrained
1 can corn, drained
1 can diced tomatoes with mild green chilies
Shredded cheddar cheese
In a Dutch oven or soup pot, combine all ingredients over medium high heat. Bring to a boil, then reduce to a simmer and cook about 20 minutes, stirring occasionally. Serve topped with crushed tortilla chips, cheddar cheese, sour cream, and chives.
