Hearty White Bean SoupUser Submitted Recipe
with smoke sausage & spinach
1 small onion, chopped
1 small green pepper chopped
2 cloves garlic, minced
5 cups of chicken stock
1 lb. Eckrich smoked sausage
4 15oz. Cans Great Northern beans(navy works fine),rinsed,drained
1 bag of fresh spinach
1/2 Cup picante sauce(any brand, heat level will do)
1/2 Tbsp. dried oregano
Pinch of cayenne pepper
1 tsp. Salt(optional)
Sauté onions, pepper, garlic in olive oil in a stock pot or dutch oven.
Add sliced and quartered sausage and cook for 10 minutes. I use a hand blender to blend SOME of the beans before adding them to the pot as to thicken the soup.
Add stock, beans, spinach and cook on high simmer for 30 minutes.
Add all remaining spices and cook additional 30 minutes on low simmer.
Adjust seasoning as needed. Have used smoked turkey sausage and is just as delish!
