Spinach Soup

This recipe is wonderful for fall and winter and oh so easy! This is pretty at Christmas time with a few cranberries around the tureen."


1 medium onion chopped
2 tbsp Butter
2 cans of chicken broth (soup) undiluted
I box frozen spinach (10 Oz.) thawed
2 tbsp all purpose flour


Chop the Onion and saute in 2 tablespoons of butter. Sprinkle with the flour while sauteing the butter.
Place in blender.
Take the thawed spinach and place it in the blender as well and add one can of the undiluted chicken broth (soup) into the blender.
Liquify. Pour the puree into a sauce pan and add the other can of chicken broth (soup). Heat thoroughly. Serve in bowls with a tablespoon of sour cream or yogurt. on top
