“
This is more like a stew, but it is easy to prepare and is very hearty. I use the Cuisinart Stand Mixer with the grinder attachment to make the ground beef from lean beef roasts IE: Blade or chuck work the best as they have a little bit of fat for moistness. "
Ingredients
1 Tablespoon Canola or Olive Oil
1 Medium Onion Diced
2 Garlic Cloves Minced
1 lb. Lean ground beef (Freshly ground with the Stand Mixer)
1/2 Cup Celery Stalk Chopped
1 can Mushrooms Drained
1 28 oz can of Diced Tomatoes with Juice
3 cups Beef Broth
1/2 Cup each of frozen peas, carrots, corn, and green beans.
1/2 Cup of Pearl or Pot Barley.
Salt and Pepper to taste. Pinch of Sweet Basil
1 Tablespoon of White Vinegar.
Instructions
Heat Oil in Soup Pot
Saute Onions and Garlic
Add Ground Beef and brown
Add rest of ingredients in order except for Barley. Bring soup to a simmer and add the barley. Cook approx 45 minutes or until barley is tender. Serve with fresh Cheese buns. A meal in itself.
