Quick Homemade chicken soup, with dumplingsUser Submitted Recipe
4 boneless skinnless chicken breasts
2 cans chicken broth
1 small onion diced
2 ribs celery diced
2 teaspoons parsley
2 teaspoons lovage
1/4 teaspoon ginger
salt and pepper to taste
1 bag kluski noodles or homemade noodles
2 cups flour
1 teaspoon salt
1/2-3/4 cups milk
Place chicken broth and all other soup ingredients, except noodles, in a 12 quart pot. Add water to fill the pot 3/4 of way to top. Bring to boil and then simmer until chicken is tender. Remove chicken, dice, and return to pot.
Keep broth on a high simmer and add noodles.
Place flour in mixing bowl. Break egg into flour and mix slightly. Add salt and milk to flour and egg. Mix well. The dumpling mixture should be modestly firm, a fork should almost stand up in mixture. Add more flour or milk as needed to get the proper consistency. Dip a teaspoon in the hot broth and then scoop out a teaspoon of mixture with the hot spoon. Drop the mixture directly into soup by placing the spoon with the mixture in the soup until the mixture falls off the spoon. Repeat this process until all mixture in soup. Simmer another 20 minutes or until noodles done and dumplings float on top of soup.
