Easy, Low Fat Potato SoupUser Submitted Recipe
2 large cans of chicken broth (lower fat)
1/2 bag baby carrots
8 medium brown potatoes
1 small onion
1 bag soft bacon bits
2 T olive oil
2 tsp dried celery (or to taste)
Pour both cans of broth into a large pot and set on medium heat. Chop carrots and onions into very small bits and sauté in 2 T of olive oil until soft.
Add bacon bits and celery to the broth. Chop potatoes into bite sized pieces and add to the hot broth, bringing to a boil. Add sautéed vegetables to the broth and stir. Heat on medium for 30 minutes or until potatoes are soft.
Take a potato masher and press into soup pot, smashing potatoes into smaller bits.
Great with cheddar cheese on top and served with hard bread.
