Mexican Tortilla Soup

This soup has that satisfying flavor when you want some hearty soup. It is full of good ingredients and very satisfying."


4 white corn tortillas cooked in oil and torn into small pieces
3 cloves crushed garlic
½ cup chopped onions
3-4 cups chicken stock
1 medium can green enchilada sauce
I cup frozen corn
1 medium potato diced
2 tbsp. chopped roasted red peppers in a jar
1 chicken breast cut in cubes
1 tbsp cilantro
1 cup cream
1/2 cup Saco dry skim milk
1 can black beans drained and rinsed


Fry tortillas slightly in oil and set aside. Brown garlic and onions in pan. Add chicken stock and enchilada sauce. Add corn, diced potato, peppers, and chicken breast. Cook for 15 minutes or more, and then add cilantro, cream, dry skim milk and beans. Add torn tortilla pieces and cook until all ingredients are combined adding salt and pepper to taste with ½ tsp. cumin and some chili pepper.
