This is a rich and flavorful way to heat up the winter months or to keep you guests asking for more."
Ingredients
5 lg. Russet Potatoes, medium diced
1 gal Water
1 qt Heavy Cream
1 pint 2% Milk
1/2 c Butter or Margarine
4 lbs Colby Jack Cheese
1 c Bacon Bits, real
1/4 c Chives, minced
1/2 c Sour Cream
2 Tbsp Kosher Salt
2 Tbsp Black Pepper, Table Grind
TT Kosher Salt
TT Black Pepper, Table Grind
Instructions
Wash the potatoes thoroughly and cut medium dice.
Bring potatoes, chives, salt and pepper to boil in the water.
Reduce the heat to a simmer and add sour cream, butter and bacon bits.
Add the milk and the heavy cream, stir often to keep from burning.
Bring to a quick boil and add the cheese while stirring. Reduce heat to a simmer.
Season with more Salt and Pepper to taste.
