E-Z Celery Chicken SoupUser Submitted Recipe
1 can - Cream Of Celery Soup
2 cups - water
2 1/2 cups - chicken stock/broth
2 tsp - ground pepper
1/2 tsp - salt
1 tsp - dried rosemary
2 tsp - dried parsley
1 tsp - garlic powder
1 tsp - onion powder
1 large can - (about one cup) boneless, skinless, chicken breast meat
1 cup - chopped celery
1/2 cup - chopped carrots
2 cups - cooked rice (Minute Rice works)
Pour soup, water, stock, pepper, salt, rosemary, parsley, garlic powder, onion powder, and meat into a large mixing bowl. Mix with stand mixer, making sure the soup is completely blended.
Pour soup into a large soup pot (8 qts.) and add celery, carrots.
Turn heat to medium-high and bring soup to a rolling boil, stirring constantly. Once there, reduce heat to low, cover pot with lid, and let simmer for 30 minutes.
Remove lid and stir well. Check that celery and carrots are tender. If they aren't, let simmer for five more minutes. If they are, remove from heat, and stir in cooked rice.
Garnish with a dollop of sour cream, fresh parsley, or grated parmesan cheese. Serve, eat, and enjoy!
