Cream of Broccoli Soup

A delicious creamy soup that can be eaten as a snack or as part of a meal. "
Ingredients
1/2 large onion
1 clove garlic
1 shallot
4 tsbp. margarine
6 oz. broccoli florets (4 cups)
6 oz. cauliflower florets (4 cups)
4 cups vegetable broth or chicken stock (2 cubes)
1/2 cup soy milk (or non diary creamer)
Instructions
Chop onions, garlic, and slice shallot into rings.
Melt butter in pot and add onion, garlic and shallot.
Cook for 6 minutes (onion should be shiny).
Add broccoli and cauliflower, 2 cubes, and 4 cups of water into pot.
Cover and cook for 1/2 hour until vegetables are soft.
Put entire thing in blender for 3 minutes.
Put back in pot and add soy milk.
Mix again if you want.
