This is so yummy and easy. Pair with a simple salad or a great bread for a quick dinner."
Ingredients
3/4 lb beef (ground or minced)
1 Cup prepared marinara sauce
8 Cups beef stock
1/2 white onion, chopped
1 medium carrot, shredded
2 stalks celery, sliced
1 can kidney beans, drained and rinsed
1 10oz pkg frozen spinach, thawed and drained
1 Cup small shell pasta, dry
1 clove garlic
1 tsp oregano
1 Tbs vegetable or olive oil
parmesan cheese for topping
Instructions
Brown ground beef in oil. Add onion and garlic; sauté until soft. Add broth, marinara, carrot, celery, spinach, beans and oregano. Bring to a boil, reduce heat to high simmer then add the pasta. Cook at a high simmer for about 15 minutes. That's it. Ladle into bowls, top with parmesan cheese and enjoy.
