Brilliant Broccoli SoupUser Submitted Recipe
1 bunch broccoli
1/2 cup wter
2 cups dairy or soy milk
2 cups rich chicken broth
2 shakes red pepper flakes
2 pinches salt
1/8 teaspoon black pepper
Warm 2 cups milk and 2 cups broth in a 2 quart saucepan. Cut broccoli tops from stems, peel stems and chop into 1 inch pieces. Steam broccoli in 1/2 cup water. When broccoli is still bright green yet fork tender, place in blender with the cooking water and 1 2 cups of the combined broth/milk mixtures. Add seasonings. Whirl briefly so that the soup still has texture, or until smooth if you have family members who might reject anything lumpy. Pour broccoli mixture into saucepan with rest of milk/broth mixture and cover. Serve as soon as possible with a salad and a quick bread for lunch or as the beginning of a dinner meal.
