Brazilian Black Bean SoupUser Submitted Recipe
2 tablespoons olive oil;
4 cloves garlic, minced;
1/2 cup onion, finely chopped;
1/2 cup Spanish Chorizo, chopped;
1/2 cup white wine:
2 cans of black beans
1 can chicken stock
1/2 cup water;
1 tablespoon hot sauce;
2 tablespoons fresh chopped parsley;
salt and freshly ground pepper to taste.
In a medium pot heat the oil and then add the garlic, onion and Chorizo; sauté it over medium heat until onion is soft and lightly golden (about 3 minutes).
Using the Perfect Blend, blend the canned beans along with its liquid until smooth, add to the pot.
Add the remaining ingredients to the pot except the salt and pepper.
Cook for 20 minutes, stirring a couple of times. Taste and add salt and pepper as needed. Serve!
